What are Your Experiences Deploying Free Community Editions of OSS?

http://serverfault.com – For starters, I'm pretty new when it comes to deploying and managing applications. I'm evaluating the prospect of deploying free community editions of open source software for customers (e.g. SugarCRM). I'm wondering if this is a good idea. My fear is that we may encounter an issue that is beyond our capacity to rectify that will result in downtime, or worse, data loss. Is this a reasonable fear? Is deploying the free community edition of OSS good practice? What free community editions of software (including operating systems) do you folks endorse and deploy? What criteria do you consider (HowTos)
