Not using UUIDs with this... /dev/sdaX and they are fine. Ran e2fsck -v -f /dev/sda[1,3] and found nothing. Confused

You should not need to manually update. Likely, your mirror is not sync'ed up. I recommend using reflector which will keep your mirrorlist fresh.

No idea about your problem but odd numbered kernels are no more unstable than even ones. If your running a rc kernel then it is considered unstable.
