What do you mean your /mnt partition? You should be installing to your / partition which you have mounted (in the live environment) at /mnt. /mnt is just a directory where you mount things.

Another reason may be that you want to use a GPT partition map and that your firmware doesn't like GPT+BIOS for some reason.

I a little confused got a new pc and I'll be installing in the uefi manner with lvm on luks and with the efi system partition having the kernel and initramfs copied over will that completely serve as my boot partition or do i still need an unencrypted /boot?

Occasionally, using GPT will make life more difficult. I had a terrible time getting my machine to boot with GPT whereas it was easy with MBR. I think this is relatively unusual, though. For most people, GPT is not much more complicated.Depending on how you plan to boot your machine, you may need to plan your partitions a little more carefully.
Do you have anything on the drive which you need? If so, back it up immediately if you can.Did you mean that you typedmkfs.ext4 /dev/sda1? That's not what you said but it seems somewhat more plausible.Only troubleshoot the drive if you have everything off it that you need.

So it can't setup the loop device?The first one looks like an fs error, though.Do you get the same error with both USB sticks you tried? Did you prepare them in the same way? Are they the same type of stick?
